Light Asian noodle dish

Ingredients for 2 servings:

  • 100 g sugar snap peas
  • 1 small bell pepper(s), red
  • 1 small bunch of coriander, finely chopped (alternatively parsley)
  • 1 onion(s), finely chopped
  • 1 clove(s) garlic, finely chopped
  • 250 g noodles (chow mein noodles)
  • ½ tsp oil (peanut oil)
  • 30 g peanut butter
  • 200 ml chicken broth, hot
  • 2 tbsp soy sauce, dark
  • 30 g spice paste (crustacean paste)
  • possibly salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Low-fat

Wash and trim the snow peas. Wash and trim the bell peppers, halve them, and cut them into thin strips. Prepare the noodles according to the instructions. Heat the oil and briefly sauté the onion and garlic. Add the bell peppers and snow peas. Sauté everything for 3-4 minutes, stirring. Stir in the peanut butter, broth, and paste. Season with salt and pepper and stir in the cilantro. Drain the noodles, toss with the sauce, and serve.
