Spiral noodles with colorful vegetables

Ingredients for 2 servings:

  • 150 g pasta (spiral pasta)
  • 100 g zucchini
  • 2 tomatoes
  • 1 small can of corn
  • 3 slice(s) ham, cooked
  • 1 tbsp butter
  • 50 ml vegetable broth, hot
  • some salt and pepper
  • 1 tbsp crème fraîche
  • 1 tbsp parsley, fresh, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta until al dente, drain, and set aside. Wash the zucchini, halve lengthwise, remove the ends, and cut into thin slices. Wash the tomatoes, remove the stems, and cut into wedges. Drain the corn, halve the ham, and cut into strips. Heat the fat in a large pan and sauté the zucchini for about 2 minutes. Stir in the pasta, corn, and tomatoes and sauté for another 2 minutes. Pour in the stock and fold in the ham. Season with salt and pepper. Fold in the crème fraîche. Sprinkle with parsley and serve.
