Light cheat mayonnaise/salad cream

Ingredients for 1 servings:

  • 1 m.-sized egg(s)
  • 250 g low-fat curd cheese
  • 1 tsp mustard
  • 2 dashes lemon(s)
  • 1 tbsp oil, neutral
  • n. B. Salt
  • n. B. Pfeffer
  • e.g. chili
  • 2 cloves garlic for aioli

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

for aioli, salads, sandwiches….

Hard-boil the egg, peel it, and puree it in a blender. Add the quark, mustard, lemon, and oil and blend. Season to taste with salt, pepper, chili, curry powder, herbs, etc. For the aioli, puree the garlic cloves at the beginning. This mayo will thicken a bit if refrigerated. Since it doesn’t contain raw egg, it’ll keep for a few days and is great to make ahead.
