Ingredients for 4 servings:
- 250 g pasta
- 1 small onion(s), red
- ¼ cucumber(s)
- 10 cocktail tomatoes
- 200 g natural yogurt
- 2 tbsp white wine vinegar
- 1 tbsp oil
- e.g. salt and pepper
- 1 tbsp tomato paste
- 1 bunch of herbs, e.g. dill, parsley and basil
- 1 tbsp mayonnaise
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 8 minutes; Total time approx. 1 hour 23 minutes
Light and delicious!
Cook the pasta according to the package instructions and let it cool. Slice the cucumber, dice the onion, and halve the tomatoes. Mix all ingredients together and let it sit in the refrigerator for at least 1 hour. Garnish with herbs.
