Ingredients for 4 servings:

  • 8 tomatoes, ripe and aromatic
  • 5 tbsp olive oil
  • salt and pepper
  • 2 tbsp Balsamic vinegar (crema di balsamico)
  • 1 garlic clove(s)
  • 1 bunch of basil
  • Sugar
  • lemon juice
  • Chili, (Pul Biber or Sambal Oelek)
  • 500g spaghetti
  • possibly grated cheese (Parmesan or Emmental)
  • possibly croutons
  • possibly sunflower seeds, pumpkin seeds, pine nuts

Working time approx. 15 minutes; Total time approx. 15 minutes

For hot days

Place the washed and diced tomatoes in a bowl. Mix in the olive oil, balsamic vinegar, salt, pepper, pul biber or sambal oelek, sliced ​​or crushed garlic, sugar, and lemon juice. Finely chop the basil (arugula is also delicious) and fold in. Cook the pasta until al dente and add it to the tomatoes. Mix everything together, season to taste, and serve. If you like, you can grate cheese over the top or sprinkle with croutons, sunflower seeds, pine nuts, or pumpkin seeds.
