Light potato salad

Ingredients for 4 servings:

  • 600 g jacket potatoes
  • 2 eggs, hard boiled
  • 1 onion(s)
  • 1 tbsp white wine vinegar
  • 1 tsp sugar
  • Salt
  • pepper, black
  • 1 egg yolk
  • 150 ml yogurt (cream yogurt)
  • 2 tbsp oil
  • 2 apples
  • 2 gherkins
  • 2 tomatoes
  • Hard-boiled eggs for garnish
  • possibly paprika powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the potatoes, eggs, and onion. Finely dice the onion and add it to a salad bowl. Stir in the vinegar, sugar, salt, and pepper. Dice the potatoes and mix in. Whisk together the egg yolk, yogurt, and oil. Peel, quarter, and core the apples. Dice the apples and cucumbers and add them to the sauce. Core and finely chop one tomato, and mix in. Mix both and season to taste. Serve, garnish with tomato wedges and eggs, and sprinkle with paprika if desired.
