Light wild garlic soup with cream cheese

Ingredients for 4 servings:

  • 40 wild garlic leaves
  • 2 spring onions
  • 1 tbsp oil, neutral
  • 750 ml vegetable stock
  • 200 g cream cheese, natural
  • n. B. white wine
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Ideal as a starter soup.

Rinse the wild garlic leaves under lukewarm running water. Remove the roots from the spring onions. Finely slice the wild garlic and finely slice the spring onions. Sauté the wild garlic and spring onions in the oil for 3 minutes until translucent. Deglaze with the vegetable stock. Add the cream cheese and dissolve it. Season everything with a little white wine, pepper, and salt. Then puree until smooth.
