Ingredients for 8 servings:
- 125 g vegetable fat
- 125 g lard
- 1,000 g low-fat curd cheese
- 20 ml liquid sweetener
- 1 packet of vanilla pudding powder
- 1 tbsp vanilla sugar
- 1 pinch of salt
- 4 eggs
- 4 tbsp lemon juice
- 300 g blackberries and raspberries, frozen, mixed
- 1 tbsp oil for the mold
Instructions
Working time approx. 10 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 5 hours 20 minutes
Simple keto or low-carb cake
Melt the 250g of fat in a saucepan over low heat. Brush a 26cm springform pan with neutral-tasting oil, such as sunflower oil. Combine all ingredients except the fat in a large mixing bowl and stir briefly. Add the melted fat and mix well. Pour the mixture into the springform pan and spread it evenly. Bake at 150°C with fan or 150°C with top/bottom heat for 70 minutes. After baking, turn off the oven and slightly open the door. Let the cake cool in the oven. Let it rest for 3 hours.
