Lightning-fast cheese spaetzle pan

Ingredients for 3 servings:

  • 400 g Spätzle (spelt spaetzle), fresh, ready to fry
  • 300 ml oat milk (oat drink), unsweetened
  • 2 tbsp processed cheese, light
  • 2 handfuls of Emmental cheese, grated
  • 1 spring onion(s)
  • some salt and pepper
  • nutmeg
  • fried onions

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

The perfect soul food for cold days

Slice the spring onion and set the green part aside for garnish. Combine the oat milk and cream cheese in a blender with a little salt, pepper, and nutmeg. Heat a little oil in a large pan and fry the spaetzle and the white part of the spring onion for 5 minutes. Then add the oat milk and cream cheese mixture and simmer for 5 minutes. Turn off the heat, stir in the grated cheese, and let it melt. Garnish with the green part of the spring onion and the fried onions.
