Ligurian Pasta Bowl À La Stefan Wiertz

Protein component

  • 300 g Steamed and pan-fried gnocchi
  • 100 g Diced celery
  • 100 g Diced fennel
  • 10 Pc. Cocktail tomatoes
  • 5 g Finely diced garlic
  • Fennel salt
  • Olive oil
  • 200 g Young spinach
  • 400 g Salmon skinless / in one piece
  • 2 tbsp Toasted sesame oil
  • 2 tbsp Light sesame
  • 2 tbsp Black sesame
  • 1 tbsp Finely diced ginger

Superfood topping

  • 100 g Coarsely diced strawberries
  • 2 tbsp Finely cut
  • 1 tbsp Finely chopped mint
  • 1 tsp Finely diced ginger
  • 1 tsp Crushed green pepper from the brine
  • Salt
  • Olive oil
  • Lemon juice

Basic bowl

  1. Briefly glaze all ingredients except for the spinach in the pan. 2. Fold the spinach into the vegetable mixture while serving.

Protein component

  1. 1. Bed the salmon on parchment. Mix the remaining ingredients together and cover the salmon with them. 3. Grill the salmon in the oven for at least 15 minutes until crispy.

  1. 1. Mix all ingredients together well and use as a topping.
