Lime pasta with vegetables

Ingredients for 4 servings:

  • 500 g penne or tagliatelle
  • 1 onion(s)
  • 200 g broccoli, frozen, or one fresh broccoli
  • 1 large zucchini
  • 100 g peas, frozen
  • 4 spring onions
  • 1 bell pepper(s), red
  • 1 tbsp lime juice
  • 1 tbsp soy sauce
  • Oil for frying
  • 1 tsp salt
  • pepper
  • 1 tsp almond butter
  • chili powder
  • Pumpkin seeds or sesame seeds, for serving

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

Cook the pasta in a pot of salted water until al dente. Tip: I recommend penne or tagliatelle for this recipe. Meanwhile, cut the vegetables into bite-sized pieces and dice the onion. Then, sauté the onion in a large pan with a little oil. Add the broccoli, zucchini, and peas and sauté for about 10-15 minutes. Just before the vegetables are tender, add the bell peppers and spring onions. Sauté the vegetables for another 5 minutes. Now add the pasta, salt, pepper, soy sauce, and lime juice to the pan. Optionally, add chili powder or 1 teaspoon of almond butter. Once everything is well mixed, the dish is ready and can be served with pumpkin seeds or sesame seeds. Tip: The vegetables used can vary. Green beans, fresh mushrooms, or cherry tomatoes, for example, are also perfect for this recipe.
