Lime spaghetti

Ingredients for 2 servings:

  • 2 lemons
  • 2 limes
  • 200 g salmon fillet(s)
  • 2 garlic cloves
  • 3 tbsp oil
  • 100 ml cream
  • 50 ml vegetable stock
  • 300g spaghetti
  • salt and pepper
  • possibly lemon balm

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the spaghetti until al dente. Meanwhile, rinse the 2 lemons and 2 limes (preferably organic) in hot water, dry thoroughly, and finely grate the zest. Mix 1/4 of them with 1 teaspoon of salt. Cut the salmon fillet into strips and sprinkle with the lemon-lime-salt mixture. Briefly fry the salmon strips in oil with the chopped garlic cloves. Then deglaze with the juice of half a lime, the cream, and the vegetable stock. Add the remaining citrus zest and season with salt and pepper. Drain the cooked spaghetti, immediately toss with the sauce, and serve sprinkled with lemon balm leaves, if desired.
