Ingredients for 1 servings:
- 130 g flour
- 10 g cornstarch
- 40 g powdered sugar
- 80 g butter
- 1 pinch of salt
- 1 tbsp water
- 125 g QimiQ
- 4 eggs
- 180 g sugar
- 120 ml lime juice (3-4 limes)
- 40 g flour
- 1 tbsp lime(s) – zest, grated
- 125 g QimiQ
- 125 g cream, whipped
- 1 tbsp vanilla sugar
Instructions
Working time approx. 35 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 35 minutes
For the base: Mix flour, starch, icing sugar, and salt. Add butter and water and slowly mix in. Press the mixture into a 26 cm springform pan and bake for approx. 20 minutes at 160°C. Then let it cool. For the cream: Mix QimiQ until smooth. Stir in the eggs, sugar, flour, lime juice, and lime zest. Pour the mixture into the base and bake in a preheated oven for 20-25 minutes at 160°C, until the filling is slightly firm. For the decoration: Mix QimiQ until smooth, fold in the vanilla sugar and whipped cream. Spread the mixture over the tart, decorate as desired, and chill for approx. 2 hours.
