Linguine in garlic oil

Ingredients for 2 servings:

  • 250 g linguine or similar pasta
  • 100 ml extra virgin olive oil
  • 6 cloves garlic
  • 1 bunch of parsley
  • 50 g Parmesan, freshly grated
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Pasta Aglio e Olio – like in Italy

Wash and finely chop the parsley. Peel the garlic and thinly slice it. Cook the pasta in plenty of boiling salted water according to the package instructions, until al dente, for about 8-10 minutes. Drain, reserving a little of the pasta water and setting it aside. Heat olive oil in a pan and sauté the garlic for about 1-2 minutes. Deglaze with the pasta water. Add the pasta to the garlic oil in the pan and toss to coat. Stir in the chopped parsley and season with salt and pepper. Serve with Parmesan cheese.
