Chicken in tomato-cream-peanut sauce

Ingredients for 4 servings:

  • 500 g chicken breast fillet(s) or chicken strips
  • 1 bell pepper(s), red, yellow or orange
  • 1 onion(s)
  • 1 can of mushrooms
  • 3 spring onions
  • 1 large tomato(s)
  • 1 can tomatoes, chopped
  • 2 tbsp, heaped tomato paste
  • 2 tbsp, heaped peanut butter, creamy
  • 2 tbsp, heaped cream cheese
  • 1 cup of cream
  • 1 tsp vegetable broth
  • 1 tsp salt
  • 2 tsp sweet paprika powder
  • 1 pinch(s) of pepper
  • 1 tsp chili

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Dice the bell pepper, onion, and tomato. Cut the chicken fillet into bite-sized pieces and sear in oil in a pan or medium saucepan for about 5 minutes. Add the bell pepper, onion, tomato, and mushrooms and cook for another 5 minutes, stirring constantly. Then add the chopped tomatoes, tomato paste, peanut butter, cream, cream cheese, and a little water if desired. Finally, add the seasonings, mix everything well, and simmer covered over medium heat for about 15-20 minutes, stirring occasionally. The vegetables can be varied, of course. I also like to add 1 zucchini and half a can of corn. You can serve it with pasta, potatoes, or rice.
