Ingredients for 2 servings:

  • 2 thin beef roulades, well hung
  • 2 tsp mustard, hot
  • 4 slice(s) smoked belly, thinly sliced
  • 1 m.-sized onion(s), cut into rings
  • Salt and pepper from the mill
  • 4 drops of Tabasco

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Pat the well-aged beef roulades dry, season with salt, pepper, mustard, and Tabasco. Place the bacon on the seasoning mix and top with the onion rings. Now roll up the roulades tightly and arrange them on a wooden board. Sprinkle with freshly ground pepper and garnish with a few onion rings. This goes best with a cold beer or a dry red wine.
