Ingredients for 4 servings:

  • 1 leg(s) of lamb, approx. 2 kg
  • 1 tbsp honey
  • 5 tbsp sherry
  • 3 tbsp olive oil
  • 5 garlic cloves, squeezed
  • 1 lime(s), juice and grated zest
  • 1 tbsp mustard, hot
  • 2 tbsp fresh mixed herbs, e.g. rosemary, sage, thyme

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

Melt the honey with the sherry, lime juice, grated lime zest, and mustard. Add the crushed garlic and chopped herbs. Brush the mixture onto the leg of lamb, wrap tightly in aluminum foil, and refrigerate overnight. The next day, preheat the oven to 220 degrees Celsius and cook the wrapped leg for about 2 1/2 hours. When unwrapping, be careful not to lose the delicious liquid. Serve with rosemary potatoes and salad, for example.
