Ingredients for 6 servings:
- 2 carrots, finely chopped
- 2 onions, finely chopped
- 4 stalk(s) celery, finely chopped
- 6 cloves garlic, finely chopped
- 400 g minced beef
- 300 g minced pork
- 300 g minced veal
- 300 ml wine, red, dry
- 200 ml cream, sweet
- 1 stalk(s) cinnamon
- ½ tsp clove(s)
- 5 bay leaves
- 100 g ham (pancetta), finely chopped
- 1 liter beef broth
- 8 tbsp tomato paste
- 500 g tomatoes, blanched, peeled and chopped
- Salt
- black pepper
- ½ bunch flat-leaf parsley
- olive oil

Meat sauce from Italy
Sauté the chopped vegetables in olive oil until soft. Then add the meat and continue to cook, stirring, until the meat changes color. Add the wine, cream, all the spices, and pancetta, and let the wine reduce completely in about 1.5 hours. Add the stock, tomato paste, and tomatoes. Season with salt and pepper to taste. Let it simmer for another 2 hours, adding the chopped parsley half an hour before the end. This goes well with tagliatelle or bavette pasta. Alternatives: -instead of pancetta, speck, or bacon -instead of cream or milk -instead of the minced meat, finely chop/mince a piece of fresh beef and then simmer for longer.
