Lonely Schnitzel in New Environment …

The perfect lonely schnitzel in new environment … recipe with a picture and simple step-by-step instructions.

For the bechamel sauce:

  • 1 leftover Schnitzel**
  • 1 smaller Cabbage
  • 2 small Tomatoes cut into pieces
  • Butter for the mold
  • 30 g Butter
  • 1 small Chopped onion
  • 30 g Flour
  • 2 tablespoon Curry
  • 250 ml Broth
  • 250 ml Milk
  • 1 tablespoon Lemon juice
  • Salt and pepper
  • 1 good pinch Sugar

For the crispy crust:

  • 50 g Butter
  • 1 good pinch Salt
  • 50 g Breadcrumbs
  1. Peel, halve and slice the potatoes; then cook in boiling salted water for 4 minutes, drain and set aside. First halve the schnitzel lengthways and then cut across into finger-width strips. Spread butter on a baking dish and preheat the oven to 200 degrees.
  2. Quarter the pointed cabbage, remove the four hard pieces of stalk and cut the rest into strips; Blanch in salted water for 3 minutes, pour into a sieve and immediately rinse in very cold water – drain well. I cut two small tomatoes into pieces to add some color to the dish.
  3. For the curry bechamel sauce, fry the chopped onion in the butter until translucent, add the flour and curry and sweat for about two minutes, stirring constantly, then gradually add the broth with the milk and simmer for another 7 minutes, stirring season with lemon juice, salt, pepper and sugar.
  4. For the crispy crust, stir-fry the crumbs in the salted butter for two minutes, then set aside. I cored two small tomatoes and cut them into pieces to add some color to the casserole.
  5. Now put half of the pointed cabbage with tomato pieces, half of the potatoes, half of the schnitzel strips and half of the curry béchamel sauce in the prepared baking dish. Do the same with the remaining ingredients and top everything with the prepared butter crumbs. Cook in the preheated oven for 35 minutes. Good Appetite!!
  6. ** Incidentally, the leftover schnitzel inspired me to make the casserole, this is how my beloved grandma used to do it with leftovers … no matter what was left, she always thought of something. This casserole can of course also be made without schnitzel (or with other leftovers).
