Lost eggs in a bed of rice

Ingredients for 2 servings:

  • 250 g rice with curry, ready cooked, from the previous day
  • 3 tsp, heaped Ajvar, mild
  • 2 tbsp, heaped tomato ketchup
  • 3 slices of processed cheese (Chester cheese)
  • 4 eggs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Place the day-old rice in a casserole dish. Stir in the ajvar and ketchup. Cut the cheese into small pieces and stir it into the rice. Make four small indentations with a spoon and carefully crack the eggs into them. Bake in the oven at 200°C for 35 minutes. For the last 10 minutes, use top and bottom heat to allow the eggs to set properly.
