Lovage vegetables with mozzarella

Ingredients for 4 servings:

  • 3 large tomatoes, pureed
  • 1 small eggplant(s), cut into cubes
  • 1 small zucchini, cut into cubes
  • 1 bell pepper(s), diced
  • 2 garlic cloves, finely chopped
  • 1 small bunch of lovage
  • 1 pinch of salt
  • 1 pinch(s) of sugar
  • 1 ball of mozzarella, cut into small pieces
  • olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Roughly chop the lovage. Heat the olive oil, briefly sauté the bell peppers, zucchini, and eggplant. Add the garlic and tomatoes and simmer until creamy. Season with sugar, salt, and lovage. Add the mozzarella cubes, toss briefly, and serve immediately.
