Low-calorie Waldorf salad with chicken

Ingredients for 4 servings:

  • 2 apples (Cox or Braeburn)
  • ½ lemon(s), juice
  • 1 tsp sweetener
  • 200 g grapes, light, seedless
  • 1 small celeriac
  • 8 spring onions
  • 2 chicken breasts
  • 250 g Greek yogurt
  • 1 garlic clove(s)
  • 1 tbsp apple cider vinegar
  • 1 handful of dill, fresh

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Slimming World recipe

Skin the chicken breasts and simmer in water for 20 minutes, drain, and let cool. Quarter and core the apples, remove the cores, and cut them into small pieces (without peeling them). Place them in a large bowl and mix well with the lemon juice and sweetener. For the dressing, mix the yogurt with the crushed garlic, vinegar, and dill, and season with salt and pepper. Halve the grapes, peel the celery, and chop them into small pieces. Slice the spring onions. Add everything to the apples. Add the dressing. Tear the chicken into bite-sized pieces, add it to the fruit and vegetable mixture, and mix everything well again.
