Ingredients for 1 servings:

  • 110 g macadamia nuts, salted
  • 50 g gluten powder
  • 50 g soy flour
  • 40 g berry-flavored protein powder (low-carb protein shake powder)
  • 5 large eggs
  • 4 g baking soda
  • 100 ml water
  • Sweetener, liquid, equivalent to 100 g sugar
  • 1 dashes vinegar, neutral, with 5% acidity

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Wash the macadamia nuts thoroughly with warm water, let them dry on paper towels, and then grind them. Combine all the dry ingredients. Beat the eggs and sweetener for 10 minutes in a food processor or with a hand mixer. Add the remaining ingredients and mix until a smooth batter forms. Pour the batter into a greased 24 cm springform pan and place it in an oven preheated to 180 degrees Celsius (350 degrees Fahrenheit). After about 20 minutes, do the toothpick test. Remove the cake from the oven as soon as the batter no longer sticks to it. The finished cake base can be eaten plain or topped with cream, fruit, etc. like a sponge cake.
