Low-carb muffins with stevia

Ingredients for 1 servings:

  • 4 eggs, separated
  • 1 pinch of salt
  • 150 g low-fat curd cheese
  • 75 ml oil
  • 4 tsp stevia powder
  • 200 g almonds, ground
  • 1 tsp cinnamon powder
  • 1 tsp baking powder
  • e.g. raspberries or cherries

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

for 12 muffins

Beat the egg whites until stiff. Whisk the egg yolks with salt, stevia, oil, and quark until frothy. Stir in the ground almonds, baking powder, and cinnamon. Carefully fold in the beaten egg whites. Divide the mixture among the holes of a 12-hole muffin tin. Press 3-5 raspberries or cherries into each hole. Bake at 170°C (top/bottom heat) for approximately 25-30 minutes.
