Low-carb berry-mint lemonade

Ingredients for 4 servings:

  • 200 g berries of your choice (fresh or frozen)
  • 1 lemon(s)
  • 50 g xylitol (sugar substitute), erythritol or equivalent amount of stevia
  • some mint leaves
  • 25 ice cubes
  • 1 liter of water (still or sparkling, if desired)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

First, make a berry syrup. To make it, combine the berries, lemon juice, and xylitol in a saucepan and simmer over medium heat for about 5 minutes, until the xylitol has dissolved and the berries have wilted. Press the mixture through a sieve to remove all the seeds. For the lemonade, combine the syrup, mint leaves, and ice cubes in a pitcher. Top up with still or sparkling water, depending on your preference. Serve and enjoy. Tip: The syrup can be easily bottled and stored for later.
