Low-Carb Big Mac Roll

Ingredients for 2 servings:

  • 250 g low-fat curd cheese
  • 100 g cheese, grated
  • 3 eggs
  • 2 tsp ketchup
  • 1 tsp mustard
  • 2 tbsp natural yogurt
  • 250 g minced meat
  • salt and pepper
  • 3 slices of processed cheese (e.g. Scheibletten)
  • 3 gherkins or pickles
  • lettuce
  • tomato(s)

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Mix the low-fat quark, grated cheese, and eggs until thick and spread on a baking sheet lined with baking paper. Bake in a hot oven at 180°C (top/bottom heat) for about 20 minutes. Allow the dough to cool. Mix the ingredients for the sauce. Brown the minced meat in a pan with salt and pepper until crumbly. Slice the cucumber and add to the minced meat. Spread 2/3 of the sauce over the baked dough. Spread the still-warm minced meat over it and let the toasted cheese melt over the minced meat. Then place the lettuce and tomatoes on top, and spread the remaining sauce on top. Using the baking paper, roll up the dough so that the Big Mac roll looks like a Swiss roll. It is important not to spread too much on the dough, as otherwise the roll will be too thick and the filling will ooze out at both ends.
