Fortunately, with a low-carb diet, you don’t have to do without sweet delicacies, because you can also easily make low-carb cakes. Our baking instructions and the number of ingredients refer to a springform pan with a diameter of 26 cm.

  • You need approx. 65 g margarine or butter and 500 g low-fat quark from the refrigerated section.
  • In addition, 5 eggs (size L), 10 ml liquid sweetener, 120 g grated coconut, a small bottle of lemon flavoring, and baking soda should end up in your shopping cart.
  • Spread the springform pan with margarine. Now take 20 g coconut flakes and distribute them evenly in the mold.
  • During the processing time, preheat your oven to at least 150 degrees Celsius.
  • Now it’s the turn of the eggs. To do this, separate the egg white and yolk.
  • Then grab a mixing bowl and mix the lemon flavor, egg yolk, a teaspoon of baking soda, quark, and butter or margarine until fluffy. You should then add the liquid sweetener and the remaining grated coconut and stir again.
  • For an airy dough, proteins are now required. Beat the egg whites with a pinch of salt in the mug until stiff and stir the beaten egg whites into the mixture.
  • Now the baking pan is filled with the dough. You can spread the mass evenly and evenly with a spoon before your low-carb cake disappears into the preheated oven for 40 minutes.
  • After the end of the baking time, lift the cake out of the springform pan. We recommend that you put the homemade cake in the fridge for at least five hours before eating it.
