Vegetarian Christmas dinner is healthy, delicious, and ethical. We have put together a few ideas for you.
1st delicious idea: Stuffed pumpkin as a vegetarian Christmas meal
Stuffed pumpkins are wonderfully suited to the season as a Christmas treat.
- Pumpkin is very easy to fill.
- To do this, cut your squash (e.g. butternut squash) in half.
- Remove the pumpkin pulp, but don’t throw it away! You can add the pulp to the filling later.
- Put the two pumpkin halves back together and wrap them with twine. Then fill in your filling.
- The pumpkin bakes in the oven for about an hour.
- A spinach-rice-chestnut mixture is suitable as a filling, for example.
2nd delicious idea: Mushroom and chestnut ragout as a vegetarian Christmas meal
Mushrooms and chestnuts go well together and also make a good Christmas dinner.
- A sauce is first made from spices such as cloves, allspice, coriander, pepper, and sage together with onions, carrots, and celeriac.
- Oil, tomato paste, and red wine are used as the basis for the sauce. Vegetable broth or simple salt can also be added to the sauce.
- The mushrooms are fried separately with onions in oil. Then the chestnuts are added to the sauce.
- The ragout can be served with boiled potatoes and parsley.
