Ingredients for 1 servings:

  • 1 kg low-fat curd cheese
  • 90 g protein powder (vanilla)
  • 2 eggs
  • 2 egg whites
  • 1 bag of vanilla pudding (approx. 75 g)
  • some lemon zest
  • 50 g durum wheat semolina
  • 1 mango(s), alternatively strawberries, apple or other fruits
  • 20 ml sweetener
  • 2 tbsp cinnamon
  • Desiccated coconut or almonds, nuts

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 15 minutes

Combine all ingredients, except the two egg whites, in a bowl and mix until smooth. Beat the two egg whites separately until stiff peaks form, then fold into the mixture. Pour the mixture into a springform pan and bake for 60 minutes at 180°C (350°F) with top and bottom heat. Then let the cake cool completely. 1 serving = 1/8 of the cake.
