Muesli soda bread

Ingredients for 1 servings:

  • 450 ml buttermilk
  • 140 g beet syrup
  • 100 g dried fruit, of your choice
  • 100 g rye meal
  • 100 g wholemeal rye flour
  • 50 g fine oat flakes
  • 220 g wheat flour type 550
  • 60 g sunflower seeds
  • 60 g pumpkin seeds
  • 60 g hazelnuts
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tsp bread spice mix
  • Oat flakes for the mold
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Soda bread with nuts and dried fruits

Preheat the oven to 200°C (top and bottom heat). Chop the dried fruit into small pieces. Combine the dried fruit, all types of flour, oats, seeds, nuts, baking powder, baking soda, and spices. Mix the buttermilk with the sugar beet syrup and add to the prepared ingredients. Knead everything into a dough. Grease a 30 cm loaf pan and sprinkle with the oats. Pour in the batter. Bake the bread for 45 minutes on the middle rack. The dried fruit, nuts, and seeds can be interchanged as desired. The bread tastes great for breakfast, simply spread with butter or a sweet spread. It also goes very well with cheese.
