Low-carb coconut balls

Ingredients for 1 servings:

  • 150 ml coconut milk
  • 100 g almonds
  • 100 g desiccated coconut
  • 2 tbsp xylitol (sugar substitute)
  • 50 g protein powder, with vanilla flavor
  • 25 almonds, blanched
  • 3 tbsp desiccated coconut

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

sugar-free and no baking

Mix the coconut milk with the almonds, desiccated coconut, egg white powder, and desired sweetness. Then chill in the refrigerator for at least an hour or longer. Form small balls with the blanched almonds and the chilled mixture and roll them in the desiccated coconut. If you have some leftover coconut milk, you can also moisten the balls with the milk beforehand to help the desiccated coconut stick together. Chill again before serving.
