Low-carb fried kohlrabi

Ingredients for 2 servings:

  • 2 m.-large kohlrabi
  • 1 tbsp, heaped coconut oil, solid, if liquid, approx. 3 tbsp
  • some salt and pepper
  • some sweet paprika powder, smoked
  • 2 tsp, heaped sour cream
  • some basil or other herbs nB
  • some paprika powder
  • n. B. bacon cubes
  • 2 eggs

Working time approx. 5 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 12 minutes

a worthy fried potato substitute

Peel the kohlrabi and cut into medium-sized cubes. Add the coconut oil to a pan, followed by the kohlrabi cubes. Fry everything until browned to your liking; this takes about 5-7 minutes. Stir everything occasionally to prevent the kohlrabi from burning. Only add the seasonings at the end and mix again. If the fried kohlrabi is intended as a side dish, it is ready to serve. It can also be served as a standalone low-carb meal with a generous dollop of sour cream, basil, or some extra paprika. Another idea is to add bacon cubes to the fried kohlrabi after about 3 minutes of frying and stir in 2 eggs at the end.
