Low-carb kohlrabi stew with meatballs

Ingredients for 8 servings:

  • 1 liter beef broth
  • 4 kohlrabi
  • 3 carrots
  • 500 g minced meat
  • 200 g cream
  • 100 g double cream cheese
  • 1 m.-sized egg(s)
  • 1 small onion(s)
  • 3 spring onions
  • cumin
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Dice the kohlrabi and slice the carrots. Place in a saucepan with the beef broth and bring to a boil. Season with salt, pepper, and nutmeg to taste. Simmer until al dente. Meanwhile, finely dice the onion and add it to the minced meat in a bowl along with the egg. Season with salt, pepper, and cumin. Mix well and form into small balls. Stir the cream and cream cheese into the vegetables. Once the cream cheese is completely melted, add the meatballs to the pan. Simmer with the lid closed for about 10 minutes. Finely slice the spring onions and add them just before serving.
