Low-carb paprika and turkey pan

Ingredients for 2 servings:

  • 400 g turkey breast
  • 1 bell pepper(s), red
  • 1 zucchini
  • 1 vegetable onion(s)
  • 1 garlic clove(s)
  • 2 tbsp balsamic vinegar
  • 1 tbsp xylitol (sugar substitute)
  • 3 tbsp tomato paste
  • 1 tbsp paprika powder, sweet
  • 1 tbsp paprika powder, hot
  • 150 ml water
  • Clarified butter
  • salt and pepper
  • e.g. guar gum or locust bean gum

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cut the turkey breast into bite-sized pieces. Chop the bell peppers and zucchini. Finely dice the onion and garlic. Brown the turkey breast in a little clarified butter. Then add the onions and garlic and cook for a while. Add the bell peppers and zucchini and sauté until al dente. Add the tomato paste, sauté briefly, and deglaze with the water and balsamic vinegar. Stir in the paprika and xylitol, season with salt and pepper, and simmer for about 5 minutes. Thicken with a little guar gum or locust bean gum, if desired. Approx. 391 kcal per serving.
