Ingredients for 3 servings:
- 2 zucchinis
- 1 eggplant(s)
- 1 onion(s), diced or cut into half rings
- 2 bell peppers, red and yellow
- 1 red chili pepper(s)
- 1 kg tomatoes, chopped, from the can or fresh
- 3 garlic cloves, chopped
- 2 tbsp thyme
- 100 ml olive oil
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Cut all ingredients into bite-sized pieces and sauté everything except the tomatoes in oil. Once all ingredients are sautéed, add the tomatoes and simmer for about 10 minutes. Season with salt and pepper.
