Ingredients for 3 servings:
- 1 onion(s), red
- ½ bell pepper(s), red
- ½ zucchini
- ½ eggplant(s)
- 2 spring onions
- 500 g tartar or minced beef
- 1 piece(s) feta cheese
- 4 m.-sized tomatoes
- some olive oil
- Herbs, Italian
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Dice the tomatoes, bell peppers, zucchini, and eggplant. Slice the onion and spring onions into half rings. Add a little olive oil to a large pan. Cook the diced tomatoes over medium heat and season with salt and pepper. Flatten them slightly with a potato masher or wooden spoon until they become mushy and watery. Sprinkle with some Italian herbs. Push the tomatoes to the edge of the pan and fry the red onions in the middle, followed by the spring onions. Push the onion mixture to the edge. At the same time, add the remaining vegetables to the center of the pan and sauté for two minutes with the lid closed. Meanwhile, in a smaller pan, sear the tartare briefly. Season with salt and pepper. Add the meat to the vegetables and mix well. Add the Italian herbs and season lightly with salt and pepper. The cheese adds a great deal of flavor. Sprinkle the feta crumbs over the mixture, stir well, and let it sit with the lid closed for 2 minutes to melt and thicken. Season again.
