Low-carb zucchini mince substitute casserole

Ingredients for 2 servings:

  • 5 zucchini
  • 1 pack of mincer substitute, approx. 250 g
  • 1 jar pesto, green
  • 100 g cream cheese
  • 100 ml milk
  • 100 g sheep’s cheese
  • 50 g cream cheese
  • 50 ml milk
  • 100 g grated cheese, for sprinkling

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Cut the zucchini into thin 3-4 mm slices. Fry the minced meat until crumbly. Add the milk, cream cheese, and pesto and heat briefly. For the sauce, mix the feta cheese with the cream cheese and milk until thick. Line a casserole dish with a layer of zucchini, add a very thin layer of minced meat, then the next layer of zucchini, and then another layer of minced meat. There should be enough minced meat for three layers. Place the final layer of zucchini on top. Pour the feta cheese sauce over the top and sprinkle with a thin layer of cheese. Preheat the oven to 200°C (top/bottom heat) and bake the casserole for 35-40 minutes on the middle rack (second from the top).
