Low-fat roasted potatoes from the air fryer

Ingredients for 3 servings:

  • 1 kg potatoes, mainly waxy
  • 1 tbsp rapeseed oil
  • Sea salt
  • Herbs of Provence

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Peel and wash the potatoes, and place them in a bowl of water to prevent them from browning. Then, cut the potatoes one at a time into approximately 2 cm cubes and return them to the bowl of water. Once all the potatoes are finely chopped, drain the water and place the potato cubes on a clean kitchen towel to dry. Cook the dried potato cubes in an air fryer using the French fries program without adding any oil or salt. In my air fryer, this takes 30 minutes. Then, heat a tablespoon of rapeseed oil in a large frying pan, toss the pre-cooked potato cubes in the pan, and season with Provençal herbs and sea salt.
