Sweet potato pancakes

Ingredients for 1 servings:

  • 250 g sweet potatoes
  • 1 egg(s)
  • 20 g wholemeal spelt flour
  • some nutmeg
  • some chili
  • salt and pepper
  • some coconut oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

For savory or sweet dishes

Finely grate the sweet potato and press out any moisture, preferably through a kitchen towel. Add the egg and flour and knead well. Season with spices and form into small balls, adjusting the size to your liking. Place the balls in a pan with the coconut oil and flatten. Fry the fritters over medium heat until golden brown.
