Ingredients for 5 servings:
- 250 g wheat flour
- 125 g butter, cold, cut into cubes
- 70 g sugar
- 1 pinch of salt
- 3 egg yolks
- 6 apples
- 1 pack of marzipan paste
- 1 pack of chopped pistachios
- 1 lemon(s), juice
- Fat for the mold
- 2 cups mascarpone
- 4 eggs, separated
- 50 g sugar
- 1 pack of vanilla sugar, real
- 1 organic lemon(s), juice and zest
- 990 g rowan berries, cleaned
- 250 g pear(s), peeled, diced
- 250 g apples, peeled, diced
- 1 organic lemon(s), juice and zest
- 2 packs of vanilla sugar, real
- 500 g gelling sugar
Instructions

For the apple tart: Peel the apples and slice into thin rings, drizzle with lemon juice, and set aside. For the pastry, combine all the ingredients, from the flour to the egg yolks, in a bowl and knead thoroughly, then refrigerate for at least one hour. Roll out the pastry in a greased tart pan and press into the corners. Roll out the marzipan and adjust it to the tart pan. Arrange the apple rings on top and sprinkle with the chopped pistachios. Then bake in a preheated oven at 180°C (top/bottom heat) for about 30 minutes. For the mascarpone cream: Beat the egg whites until stiff. Mix the mascarpone with the sugar and the lemon zest and juice, and mix well. Then fold in the egg whites and refrigerate. For the rowanberry mousse: Freeze the rowanberries for at least 48 hours to lose their bitterness and enhance their flavor. Simmer the berries in a little water for 20 minutes, then pass them through a fine sieve. Measure 500 g of the puree. Mix with the pear and apple pieces, vanilla sugar, lemon zest, juice, and preserving sugar. Puree with a hand blender and let it simmer for at least 4 minutes while stirring. If you want to store it longer, you can now fill it into hot jars and seal them.
