Lukewarm Fried Potato and Tomato Salad

The perfect lukewarm fried potato and tomato salad recipe with a picture and simple step-by-step instructions.

  • 3 middle Beefsteak tomatoes
  • 1 Red Onion, finely diced
  • 2 Garlic cloves, finely grated
  • 1 pinch Sugar
  • 2 tbsp Olive oil
  • 600 g Potato cubes
  • Black pepper from the mill
  • Salt
  • 2 Spring onions, cut into thin rings
  • Clarified butter
  1. Dice the beefsteak tomatoes and place in a bowl. Season with pepper and salt. Add the olive oil, the onion cubes, the pinch of sugar and the grated garlic and let it steep for about 1 hour. The juice that then results is also the dressing.
  2. Melt some clarified butter in a pan and fry the potato cubes and all around until they are golden brown. Then season with pepper and salt and remove from the pan and add to the tomatoes, mix everything well and serve and then sprinkle with the spring onion rings.
