Lukewarm tomato spread

Ingredients for 1 servings:

  • 250 g butter
  • 200 g tomato paste
  • 2 small tomatoes
  • 1 m.-large onion(s), red
  • 1 shot of port wine
  • 1 tbsp mixed herbs
  • 1 tbsp, heaped parsley, chopped
  • 1 tbsp sugar
  • 1 pinch(s) of salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Finely dice the onion and tomatoes. Melt a little butter in a small saucepan and sauté the onions. Season with salt and pepper and deglaze with the port wine. Add the tomatoes and let everything reduce for a few minutes. Meanwhile, heat the remaining butter in a small saucepan until melted. Add the tomato paste and whisk, then add the tomato stock and the remaining ingredients and season to taste. Remove from the pan, puree, and transfer to a suitable container. Allow to cool slightly. It tastes best served warm on bread or baguette, but can also be refrigerated and consumed a few days later.
