Ingredients for 8 servings:

  • 500 g lychee(s) from the can and 100 ml of the juice
  • 70 g glucose
  • 40 g sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 30 minutes; Total time approx. 8 hours 40 minutes

Drain the lychees and reserve 100 ml of the juice. Heat with glucose and sugar until dissolved. Add the fruit and puree with a hand blender. Strain through a sieve and chill in an ice cream maker. Allow to harden in the freezer. Refrigerate for at least half an hour before serving.
