Mac & Cheese Muffins

Ingredients for 12 servings:

  • 250 g macaroni (chips)
  • 250 g cheese, grated, e.g. Cheddar, or other varieties
  • 250 ml milk
  • 2 tsp cornstarch
  • 1 egg(s)
  • 20 g butter, liquid
  • 60 g breadcrumbs

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Most people are familiar with mac and cheese, but it’s probably not yet common knowledge that this pasta can also be made into muffins. 1. Cook the pasta in salted boiling water until al dente. 2. In a bowl, whisk together the egg, milk, and cornstarch. 3. Place the drained, still-hot macaroni in a bowl, top with the grated cheese, and mix until the cheese is partially melted. 4. Then pour the egg and milk mixture over the pasta and mix thoroughly. 5. In a cup or small bowl, add the melted butter to the breadcrumbs and mix thoroughly. 6. Place paper baking cups or silicone baking cups into the holes of a muffin tin. Fill them with the prepared macaroni and generously top with the breadcrumb mixture. 7. Bake the muffins in the oven at 200°C (400°F), fan/convection oven at 180°C (350°F) for about 20 minutes. 8. Have fun preparing it and enjoy your meal!
