Ingredients for 4 servings:
- 600 g potatoes, floury
- 1 shallot(s)
- 6 slices of bacon
- 2 egg yolks
- 2 sprigs of flat-leaf parsley
- Nutmeg, from the mill
- Flour
- Butter, for frying
- Salt

A different kind of potato side dish!
Finely dice the shallots and bacon, then sauté in a non-stick frying pan without adding butter for 3-4 minutes. Set aside and let cool slightly. Pluck the parsley leaves from the stalks and finely chop. Peel the potatoes, cook in salted water, drain, and let the steam evaporate. Only press the potatoes through a potato ricer when they are lukewarm. Stir the bacon, shallots, parsley, and egg yolk into the lukewarm potato mixture. Season with salt and freshly grated nutmeg. Roll the potato mixture into a roll about 4 cm in diameter on a lightly floured surface. Let cool. Cut the potato roll into 1.5 cm thick slices. Fry on both sides in a non-stick frying pan in a little butter. Serve as a side dish to meat dishes with a little sauce, or as a main course with a fresh salad. The mixture can be prepared in advance and stored in the refrigerator.
