Macaroni with Italian "salamelle" sauce

Ingredients for 4 servings:

  • 400 g pasta (macaroni)
  • 120 g sausage (salami, spicy original Italian sausages)
  • 1 onion(s)
  • 1 carrot(s)
  • 1 piece(s) celeriac
  • 1 small bell pepper(s) (yellow)
  • 80 ml vegetable stock
  • 2 tbsp tomato paste
  • 3 tbsp oil
  • 2 tbsp butter
  • 2 tbsp cheese (Pecorino, freshly grated)
  • basil
  • Salt

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

spicy and hearty

Salamelle are a spicy Italian sausage specialty with a relatively coarse but very savory filling. You can find them at delicatessens or stores selling Italian specialties. Chop the onion and cut it into small cubes. Peel the carrot and cut it into thin slices. Clean the celery root and also cut it into small cubes. Dice the bell pepper. Peel the sausage meat from the salamelle. Heat butter and oil in a saucepan and sauté the onion, carrot, and celery over low heat for about 4 minutes. Then stir the sausage meat and bell pepper into the vegetables, pour in the broth, stir in the tomato paste, and simmer for a few minutes. Roughly tear a few basil leaves and stir in. Keep the sauce warm. Cook the macaroni in salted water according to the package instructions until al dente, drain, and immediately return it to the pan. Then pour the warm sausage sauce over the macaroni, grate the pecorino over it, and mix everything well. Now place the dish on a preheated serving platter or divide it into portions onto plates and garnish with some fresh basil leaves.
