Ingredients for 3 servings:

  • 300 g pasta
  • Salt
  • 100 g cooked ham, diced
  • 50 g butter
  • 25 g flour
  • 300 ml milk or more, as needed
  • 3 tbsp aioli, or 1 small garlic clove or some garlic powder
  • nutmeg
  • n. B. Cheese, grated (e.g. Cheddar, Edam, Gouda, Tilsiter or processed cheese)
  • 2 handfuls of cheese (gratin cheese)
  • 2 handfuls of chips (pepper chips)

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Cook the pasta in salted water according to the package instructions. Drain and place in a baking dish. While the pasta is cooking, heat the butter in a pan. Add the flour and sauté until golden brown, stirring constantly (the longer you sauté, the darker the sauce will be). When the color is desired, add the milk while whisking, making sure no lumps form. Add the diced ham and simmer briefly, as the ham will release salt into the sauce. Stir your chosen cheese into the simmering sauce until completely melted. Add more or less depending on how intense the cheese flavor is desired. Season to taste with salt, aioli, and nutmeg. Gradually add the sauce to the pasta and mix well. The pasta shouldn’t be floating or too dry, so you may want to omit all the sauce or add a splash of milk. Sprinkle with the gratin cheese. Crumble the chips into a bagel and sprinkle over the cheese. Bake the casserole in the oven at 180°C (top/bottom heat) for 25-30 minutes. Let it rest for 5 minutes and then serve. Serve with a fresh carrot and apple salad or coleslaw.
