Mahonia syrup

Ingredients for 1 servings:

  • 700 g berries, fully ripe mahonia berries
  • 500 g sugar
  • 5 g citric acid

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Strip the mahonia berries from the stems, wash them, and place them in a pot. Fill with water until they are covered. Add the sugar and citric acid and bring to a boil. Simmer for another 10 minutes. Strain, pour the syrup into tightly sealed bottles, and seal while still hot. Once cooked, mahonia berries are no longer poisonous, similar to elderberries! However, they also lose their original, sour flavor, and much of the vitamin C is lost, as with many fruits.
