Ingredients for 5 servings:
- 1 kg beans, green, broad
- 1 large onion(s)
- Salt
- 1 shot of milk (preferably 3.5%)
- some oil
- 1 piece(s) butter
- n. B. water
Instructions

Albanian green bean soup with milk
First, wash the beans and cut them into approximately 2 cm pieces. Peel and finely chop the onion. Heat the oil and butter in a large pot and sauté the onion over medium heat until translucent. Then add the finely chopped beans and simmer, stirring constantly (!), until they are somewhat soft (between 5 and 10 minutes – so be patient) and almost sticky. Then add enough water to completely cover the beans, at least two thumbs deep. Add salt. Let the beans cook for about 1 1/2 hours. If the beans are still too firm, add more water and let it cook again; they should practically “melt.” Once the beans are soft and the water has almost evaporated, meaning the beans are no longer covered with water, add a good splash of milk. Bring to a boil once, then immediately turn off the heat and let the pot stand. Season again and add more salt if necessary. It tastes delicious and has enough sauce to dip into bread—flatbread works best.
