Maiale Tonnato

Tuna sauce
- Salt
- Pepper from the grinder
- 3 tbsp Olive oil
- 1 Can Tuna in oil
- 3 Anchovies
- Lemon juice
- 1 small Onion
- 100 g Mayonnaise
- 1 tbsp Capers
- Preheat the oven to 200 ° C. Wash the fillet, pat dry, remove the tendons if necessary. Season with salt and pepper all around. Heat 2 tablespoons of oil in a pan. Fry the fillet all around for 2-3 minutes. Roast in the hot oven for about 12-14 minutes. Then take it out, wrap it in aluminum foil and let it cool down. Remove the meat from the foil and store the resulting meat juice.
- For the sauce, drain the tuna well. Rinse the anchovies with cold water. Peel onion and chop finely. Heat 1 tablespoon of oil. Sauté the onion in it. Let cool down a little, then puree with the tuna, mayonnaise, meat juice, capers and anchovies with a hand blender. Season with salt, pepper and lemon juice.
- Cut the pork fillet into thin slices and place on a plate. Serve with the tuna sauce.
