Maiale Tonnato

Tuna sauce

  • Salt
  • Pepper from the grinder
  • 3 tbsp Olive oil
  • 1 Can Tuna in oil
  • 3 Anchovies
  • Lemon juice
  • 1 small Onion
  • 100 g Mayonnaise
  • 1 tbsp Capers
  1. Preheat the oven to 200 ° C. Wash the fillet, pat dry, remove the tendons if necessary. Season with salt and pepper all around. Heat 2 tablespoons of oil in a pan. Fry the fillet all around for 2-3 minutes. Roast in the hot oven for about 12-14 minutes. Then take it out, wrap it in aluminum foil and let it cool down. Remove the meat from the foil and store the resulting meat juice.
  2. For the sauce, drain the tuna well. Rinse the anchovies with cold water. Peel onion and chop finely. Heat 1 tablespoon of oil. Sauté the onion in it. Let cool down a little, then puree with the tuna, mayonnaise, meat juice, capers and anchovies with a hand blender. Season with salt, pepper and lemon juice.
  3. Cut the pork fillet into thin slices and place on a plate. Serve with the tuna sauce.
